Spicy Cauliflower & Kale Soup
Ingredients:
- "Welcome to Jamrock" Jerk Spice Rub
- 1 head cauliflower
- 1 small white onion
- 3 bacon slices
- 1 lb. sausage
- 3 - 6 garlic cloves
- 2 cups chopped kale
- 2 chili pepper ***
- 1 cup heavy cream
- Beef bullion or 32 oz. beef stock
Directions:
- Start this recipe by prepping all of the ingredients. Chop the bacon, slice the sausage, dice the onion and peppers and chop the cauliflower into small florets.
- Sauté the bacon until it's slightly browned then add the onion and peppers.
- Once the onion and peppers are translucent, add the cauliflower, sausage, "Welcome to Jamrock" Jerk Spice Rub, and the stock. Simmer for 15 minutes (until the cauliflower is tender).
- Using an immersion blender, puree the soup about half way then add the heavy cream.
- Bring back to a simmer, add the kale and stir until it's wilted. Remove from heat and salt and pepper to taste.
*** Use your favorite peppers, hot or mild. Even bell pepper works. ***
