Black Eyed Pea Hummus

Ingredients:

  • 1 can (15 oz.) black-eyed peas (drained, liquid reserved)
  • 2 tbsp. lemon juice
  • 1 clove garlic, minced
  • 2 tbsp. hot peanut butter (or regular peanut butter/tahini)
  • ½ tbsp. "Bayou Baybee" Cajun Blackening Rub
  • Reserved bean liquid, as needed

Directions:

  1. In a mason jar, add strained black-eyed peas, lemon juice, garlic, peanut butter, and "Bayou Baybee" Cajun Blackening Rub
  2. Blend with a stick blender until smooth, adding reserved liquid as needed for desired consistency.
  3. Serve chilled with crackers, veggies, or pita chips!
