Black Eyed Pea Hummus
Ingredients:
- 1 can (15 oz.) black-eyed peas (drained, liquid reserved)
- 2 tbsp. lemon juice
- 1 clove garlic, minced
- 2 tbsp. hot peanut butter (or regular peanut butter/tahini)
- ½ tbsp. "Bayou Baybee" Cajun Blackening Rub
- Reserved bean liquid, as needed
Directions:
- In a mason jar, add strained black-eyed peas, lemon juice, garlic, peanut butter, and "Bayou Baybee" Cajun Blackening Rub
- Blend with a stick blender until smooth, adding reserved liquid as needed for desired consistency.
- Serve chilled with crackers, veggies, or pita chips!
