Ingredients:
"Welcome to Jamrock" Jerk Spice Rub
3 skinless, boneless chicken thighs
1 large red pepper
1 yellow onion
Olive oil
Sour cream
Instruction:
- Slice the chicken, peppers, and onion and place in a large bowl.
- Drizzle the ingredients with olive oil and stir.
- Season with "Welcome to Jamrock" Jerk Spice Rub.
- Evenly spread the ingredients onto a baking sheet and place in the oven at 400º and cook for 10 minutes.
- Remove from the oven and stir. Return to the oven for 10 more minutes.
- Turn the oven up to 450º and cook for another 5 minutes.
- Heat tortillas and serve family style with sour cream.
